This Santoku kitchen knife is made in Tsubame-Sanjo, Japan, and is an ideal first high-quality knife that balances price and performance. It features a total length of 290 mm, blade length of 165 mm, weight of 135 g, and spine thickness of 1.8 mm, offering excellent control without feeling too light or too heavy. The blade is precision water-sharpened by craftsmen in Sanjo for a keen, durable edge, and the knife is dishwasher safe for everyday convenience.

The blade uses domestically produced molybdenum vanadium stainless steel, known for outstanding wear resistance, toughness, and corrosion resistance. This steel maintains hardness and strength even under temperature changes and is also used for medical scalpels. It takes and holds a sharp edge better than typical stainless blades, and can be maintained with a simple sharpener; for best long-term sharpness, periodic whetstone sharpening is recommended.

The handle is made from polyacetal resin, one of the top engineering plastics, offering high strength, excellent wear resistance, fatigue resistance, and stability under heat. The blade and handle are integrally molded as a single piece, so the handle will not loosen or pull out. Designed by Nagao in Tsubame and manufactured by Shimomura Kogyo in Sanjo, this knife is built for reliable daily use.
